Eggs
A heavenly twist on deviled eggs.
Ingredients
8 hard-boiled eggs
2 oz. cream cheese, softened
3 oz. canned tomato puree’
1 Tbsp. mayonnaise
1 head lettuce, shredded
Preparation
- Cut eggs in half lengthwise. Scoop out yolks and mash. Set
whites aside.
- Combine yolks, cheese, tomato puree and mayonnaise in a bowl.
- Beat well to give a soft-peak consistency, adding more mayonnaise
if necessary.
- Season with salt and pepper to taste. Spoon mixture back into
egg whites. Serve on a bed of lettuce.
