Bruschetta with Tomatoes
Serves 24 slices

Ingredients
1 large garlic clove, halved
24 slices diagonally cut French bread baguette
1-1/2 cups diced plum tomatoes
2 tbsp. finely chopped red onion
1 tbsp. extra-virgin olive oil
24 small basil leaves

Preparation

  • Preheat oven to 350 degrees.
  • Rub cut sides of garlic over one side of each bread slice; place bread on an ungreased baking sheet.
  • Bake for 10 minutes or until lightly browned, turning once.
  • Combine tomato, onion and oil in a small bowl. Spoon tomato mixture evenly onto bread slices; top each with a basil leaf.
