Low-Fat Layered Ranchero Dip
Serves 20

Ingredients
30 oz. can pinto beans, drained & well-mashed
1/2 tsp. ground cumin
1/3 c. non-fat plain yogurt
1/3 c. non-fat sour cream
1/3 c. non-fat mayonnaise
1 Tbsp. + 1 tsp. taco seasoning mix
4 oz. can green chilies, drained & diced; separated
3 oz. low-fat cheddar cheese, grated
1/4 c. green onions, diced
2 c. fresh tomatoes, diced

Preparation

  • Combine beans, cumin, and half the green chilies.
  • Spread on a serving platter or 10-inch quiche dish.
  • In a bowl, combine yogurt, sour cream, mayonnaise, and taco seasoning mix. Spread over beans.
  • Sprinkle with remaining chilies, cheese, onions, and tomatoes.
  • Serve with Homemade Tortilla Chips. (See recipe)
