Turkey Roll-Ups
Serves 4
Ingredients
3 oz. fat-free or light cream cheese, softened
2 tbsp. nonfat, low-sodium salsa
2 tbsp. sliced green onion
1 tsp. Dijon mustard
4 (8-inch) nonfat or low-fat flour tortillas (low sodium)
1-1/3 cups shredded lettuce
6 oz. very thinly sliced or finely chopped roasted turkey breast,
skin and all visible fat removed
1/4 cup shredded nonfat or reduced-fat cheddar cheese
4 strips red bell pepper, about 1/4-inch wide
Preparation
- In a small bowl, combine cream cheese, salsa, green onion and
mustard, stirring well.
- To assemble, spread 2 tablespoons of the mixture over each tortilla.
Layer 1/3 cup lettuce, 1/4 of the turkey, 1 tablespoon cheddar,
and 1 red pepper strip over cream cheese mixture.
- Roll to enclose filling.
- Wrap tightly in plastic wrap and refrigerate for several hours
or until serving time. Cut each tortilla roll into fourths.
