Apricot
Yogurt Parfait
Serves 4
Ingredients
1 15-oz. can apricots in syrup, sliced
1 package unflavored gelatin
2 tbsp. lemon juice
2 tbsp. brandy
1 cup plain, low-fat yogurt
Preparation
- Drain apricots, reserving 1/4 cup of the syrup. Divide apricots
among 4 parfait glasses.
- Pour syrup into a microwave-safe dish. Sprinkle gelatin over
syrup and let stand for 5 minutes to soften. Microwave on medium
for 30 seconds or until gelatin has dissolved.
- Stir in lemon juice and brandy. Pour over apricots.
- Spoon on yogurt before serving.
Cook's tip: Other canned fruits are excellent substitutes for
the apricots.
