Ingredients
Nonstick cooking spray
1-1/2 cups flour
1/4 cup sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
2 egg whites
2 large ripe bananas, mashed
2/3 cup skim milk
1/3 cup plain nonfat yogurt
Preparation
- Preheat oven to 400 degrees.
- Spray muffin tins with nonstick cooking spray.
- Combine dry ingredients in a bowl. Combine egg whites, mashed
bananas, milk and yogurt in a separate bowl.
- Add dry ingredients to banana mixture. Blend until mixed.
- Pour into muffin tins and bake for 20 to 25 minutes or until
a toothpick inserted in the center of a muffin comes out clean.
- Cool on a rack for 30 minutes before removing from tins.
