Chocolate
Banana Bars
Serves 24 (2-1/4 x 2 inches)
Ingredients
1/4 cup cocoa
1 tbsp. water
2 very ripe bananas
1-1/2 cups sugar
6 egg whites or 1 cup egg substitute
1 tsp. vanilla extract
1 cup oatmeal or oat bran
1/4 cup flour
1/4 tsp. (or less) Lite Salt
1/4 cup walnuts, chopped
Preparation
- Preheat oven to 350 degrees.
- Place the cocoa, water and bananas in a blender or large bowl,
and beat until liquefied.
- Add the sugar, egg whites or egg substitute, and vanilla.
- Stir in the oatmeal or oat bran, flour, Lite Salt and nuts.
- Pour into a 9x13 inch baking pan sprayed lightly with nonstick
cooking spray.
- Bake for 45 minutes. Cool and cut into squares.
