Chocolate
Oatmeal Cookies
Serves 36 (1 cookie per serving )
Ingredients
1-1/2 cups brown sugar, firmly packed
3/4 cup acceptable* vegetable oil
1/2 cup cocoa, sifted
2 teaspoons vanilla
1/2 cup skim milk
1-3/4 cups all-purpose flour
2-1/2 teaspoons baking powder
1/2 teaspoon salt
1-1/2 cups quick-cooking oatmeal
*Use canola, safflower, soybean, sunflower, sesame, or olive oil
Preparation
- Preheat oven to 350 degrees.
- In a large mixing bowl, cream sugar and vegetable oil together.
- Add cocoa, vanilla and milk.
- Mix well.
- In a medium bowl, sift together flour, baking powder and salt.
- Blend into sugar/oil mixture.
- Stir in oatmeal.
- Drop by teaspoonfuls onto ungreased baking sheets. Bake for
7 to 9 minutes.
