Fudge
Serves 48 (1 piece per serving)
Ingredients
Vegetable oil spray
1 cup brown sugar, firmly packed
1 cup sugar
1/3 cup cocoa
2/3 cup skim milk
3 tablespoons acceptable* vegetable oil
1 teaspoon vanilla
*Use canola, safflower, soybean, sunflower, sesame or olive oil
Preparation
- Lightly spray an 8-inch square baking pan with vegetable oil
spray. Set aside.
- Place brown sugar, sugar and cocoa in a 3-quart saucepan. Add
milk and mix.
- Cook over medium heat until mixture reaches 236 degrees on
a candy thermometer, or until a small amount of syrup dropped
in cold water forms a soft ball. Remove from heat.
- Add vegetable oil but do not stir. Cool until the bottom of
the pan is lukewarm.
- Add vanilla and beat with an electric mixer for 5 to 10 minutes
or until fudge is thick and no longer glossy.
- Spread in prepared pan.
- Cool until firm.
- Cut into 48 equal portions.
Variation 1: Nut Fudge—After beating, stir
in 1/2 cup chopped walnuts.
Variation 2: Peanut Butter Fudge—After beating,
add 1/2 cup peanut butter. Run a table knife through the fudge to
form streaks.
