Oatmeal
Carrot Cookies
Serves 24
Ingredients
Vegetable oil spray
1/2 cup raisins
1/3 cup margarine
1/2 cup brown sugar, firmly packed
1 egg
1-1/4 cup carrots, grated
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/2 tsp. lemon rind, grated
1 cup whole-wheat flour
1/2 cup quick-cooking oatmeal
1 tsp. baking powder
1/2 tsp vanilla
1 tbsp. confectioners' sugar
Preparation
- Preheat oven to 350 degrees. Lightly spray a 7-1/2 x 11-1/2
x 2-inch baking pan with oil.
- Cover raisins in a bowl with boiling water. Soak for 15 minutes.
Drain and set aside.
- In a large mixing bowl, cream together margarine and brown sugar
until fluffy. Add egg. Beat well. Add carrots, cinnamon, nutmeg
and lemon rind. Mix well.
- Mix in flour, oatmeal and baking powder.
- Mix in vanilla, and fold in drained raisins.
- Pour into prepared pan. Bake for 20 to 25 minutes. Let cool.
Sprinkle lightly with confectioners' sugar.
- Cut into 24 bars.
