Corn Bread Muffins
Serves 8
Ingredients
Nonstick cooking spray
1/2 cup all-purpose flour
1/2 cup course yellow cornmeal
1-1/2 tsp. baking powder
1/4 tsp. salt
1/2 cup fat-free milk
1 egg or egg substitute that equals 1 egg
2 tbsp. honey
2 tbsp. applesauce, unsweetened
Preparation
- Preheat oven to 425 degrees.
- Lightly spray 8 muffin cups withnonstick cooking spray.
- Combine flour, cornmeal, baking powder and salt in a large
bowl, stirring well.
- Beat the remaining ingredients in a small bowl.
- Make a "well" in the cornmeal mixture. Pour the milk
mixture into well, stirring just until moistened.
- Fill muffin cups 2/3 full with batter.
- Bake for 15 to 20 minutes, or until a toothpick inserted in
the center of muffins comes out clean.
