Sweet Potato Pie
A reduced-fat favorite

Ingredients
3 large sweet potatoes, cooked, peeled and mashed
3/4 cup sugar
1/2 cup egg substitute
2 tsp. vanilla
1 tsp. lemon-flavored extract
1 tbsp. butter-flavored extract
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. lemon juice
1-1/2 cups evaporated, fat-free (skim) milk
1 ready-make pie shell

Preparation

  • Preheat the oven to 350 degrees.
  • Mix the first 10 ingredients together and beat until smooth.
  • Pour into the pie shell and bake for 40 minutes.
