Ginger Pears
Serves 8
Ingredients
8 canned, no-sugar-added pear halves, in natural juices
1/2 cup brown sugar, firmly packed
1 tsp. fresh lemon juice
1/2 tsp. ground ginger
1/4 cup unsalted, dry-roasted pecans, chopped
Preparation
- Preheat oven to 350 degrees.
- Drain pears, reserving juice. Arrange pear halves close together
in a baking dish, cut side up. Set aside.
- In a small bowl, combine brown sugar, lemon juice, ginger and
pecans; mix well.
- Spoon mixture into pear halves and sprinkle lightly with ginger.
Pour reserved pear juice around pears to cover bottom of dish.
- Bake for 15 to 20 minutes.
- Serve warm or cover and refrigerate to serve chilled. Garnish
with bits of ginger.
