Broiled Fish with Tomato-Horseradish Topping
Serves 4

Ingredients
2 Tbsp. fat-free sour cream
2 Tbsp. ketchup
1 Tbsp. light mayonnaise
2 Tbsp. drained horseradish
4 fish fillets (5 oz. each)
4 tsp. lemon juice
1/2 tsp. salt
1/4 tsp. pepper
1/4 cup plain dried breadcrumbs

Preparation

  • Preheat the broiler. In a small bowl, combine the sour cream, ketchup, mayonnaise, and horseradish.
  • Place the fish on a broiler pan. Drizzle the fillets with the lemon juice and sprinkle with the salt and pepper. Broil 4 to 6 inches from the heat for 5 minutes.
  • Spread the horseradish mixture over the fish. Sprinkle the breadcrumbs over the top. Broil the fish for 2 minutes, or until the topping is lightly browned and the fish just flakes when tested with a fork.
