King
Ranch Chicken (Pollo King Ranch)
Serves 8
Ingredients
1 lb. cooked chicken breast, shredded
12 corn tortillas
1 cup fat-free cheddar cheese, shredded
1 cup part-skim mozzarella cheese, shredded
1 can reduced-calorie cream of chicken soup
1 can low-sodium cream of mushroom soup
1/2 can low-sodium chicken broth
1 cup onions, finely diced
1/2 cup canned mushrooms
Preparation
- Preheat oven to 350 degrees. Prepare casserole dish by spraying
with nonstick cooking spray. Mix cheeses together and set aside.
- In a large bowl, mix together both cream soups and chicken
broth. Blend well and set aside.
- Tear corn tortillas into small pieces. Arrange one layer of
tortilla pieces on bottom of prepared casserole dish. Add 1/2
of soup mixture, half of onions, half of mushrooms, 1/3 of cheese
and half of chicken. Repeat with remaining ingredients.
- Top with cheese and bake in 350-degree oven for one hour.
- Serve immediately.
