Oven-Fried
Chicken
A low-fat alternative for a Southern standard.
Serves 6
Ingredients
3 lb. chicken fryer, skin removed
1 cup fat-free (skim) milk
1 tsp. thyme
1-1/2 tsp. garlic powder
1 tsp. onion powder
1 tsp. parsley
1 tsp. paprika
1-1/2 tsp. pepper
1/2 tsp. salt
1/8 tsp. red pepper
1 cup flour
Preparation
- Cut chicken into pieces and place them in the milk.
- In a large bowl, combine all remaining ingredients. Dredge each
chicken piece in the flour mixture, making sure all pieces are
well coated.
- Place the chicken in a baking pan that has been sprayed with
nonstick cooking oil. Also spray the top of the chicken with nonstick
cooking spray.
- Bake at 400 degrees for 45 minutes or until the chicken juices
run clear.
