Kabobs
Serves 6
Ingredients
1-1/2 lb. lean pork tenderloin, cut into 2- to 3-inch cubes
Kabob skewers, 6 to 8-inches long
Marinade
2 Tbsp. pineapple juice concentrate
1 Tbsp. minced ginger
1/3 cup water
2 Tbsp. lime juice
2 tsp. dark rum
- Place the pork cubes in a ziplock bag.
- Combine all the ingredients for the marinade. Add to the pork.
Let the port marinate for several hours.
- Thread six skewers with the marinated pork. Grill 6 inches
from the heat source for about 10-15 minutes, rotating the skewers.
Make sure the pork is completely cooked all the way through (there
should be no traces of pink).
- Serve over rice, if desired.
