Saucy
Beef (Carne Guisada)
Serves 8
Ingredients
3 lbs. lean round steak, all fat removed, cut into 1-inch pieces
1/2 green pepper, seeded
3 large mature tomatoes
1 small onion
3 cloves garlic
1/2 tsp. red chili powder
1 tsp salt
1/2 tsp. ground cumin
1/8 tsp. oregano
Preparation
- Add green pepper, tomatoes, onion, garlic, chili powder and
spices to blender or food processor and blend until smooth and
pureed. Set aside.
- Add beef cubes to Dutch oven and brown, draining all excess
fat.
- Combine vegetable puree with beef and bring to a boil. Reduce
heat, cover and simmer for 45 minutes.
