Fish Fillets
Serves 4
Ingredients
Vegetable oil spray
1 lb. fish fillets
1/2 tsp. pepper
1/2 cup fat-free milk
4 drops red hot-pepper sauce
1/2 cup cornmeal
1/4 cup minced fresh parsley
1 tsp. dried tarragon, crumbled
1/4 tsp. cayenne pepper
4 lemon wedges
Preparation
- Preheat oven to 450 degrees.
- Lightly spray a 13x9x2-inch baking dish with vegetable oil spray.
Sprinkle fish with black pepper.
- In a shallow bowl, combine milk and hot-pepper sauce.
- In a separate shallow bowl, combine remaining ingredients,
except lemon wedges.
- Dip fish in milk mixture, then roll in cornmeal mixture. Place
in baking dish.
- Bake 15 to 17 minutes, or until fish flakes easily when tested
with a fork. Serve with lemon wedges.
