Egg-less Salad
Serves 4
Ingredients
1 lb. firm tofu, well drained, crumbled
1 Tbsp. minced onion
2 Tbsp. minced celery
2 Tbsp. mayonnaise
1 Tbsp. sweet pickle relish
1 tsp. distilled white vinegar
1 tsp. prepared mustard
1 tsp. white sugar
1/2 tsp. ground turmeric
1/4 tsp. dried dill weed
1 Tbsp. dried parsley
Green food coloring
Salt and pepper to taste
Preparation
- In a small bowl, combine mayonnaise, sweet pickle relish, vinegar,
mustard, sugar, turmeric, dill, and parsley. Mix well, and set
aside.
- Place drained/crumbled tofu in large bowl. Use 4-5 drops of
green food coloring to make the tofu turn color.
- Stir in onion and celery. Add mayonnaise mixture. Season to
taste with salt and pepper.
- Chill for several hours to allow flavors to blend. Serve on
wheat toast with crisp lettuce and fresh tomato slices or your
choice of crackers.
Cook’s note: For a vegetarian version of this recipe,
use soy mayo. This is a fun treat for kids and a healthy snack or
meal that parents feel good about serving.
