Salad
Serves 4
Ingredients
4 lettuce leaves
4 cups mixed greens
1/2 cup fresh or frozen green beans
1/2 cup onions, thinly sliced
2 flour tortillas
Dressing
1/2 cup nonfat yogurt
1/2 cup fat-free mayonnaise
2 tbsp. Dijon mustard
Ground pepper to taste
Preparation
- Mix salad ingredients and toss with dressing.
- Cut tortillas into thin strips (1/8-inch) and brown in a skillet
sprayed with nonstick vegetable oil cooking spray.
- Garnish top of salad with tortilla strips.
- Serve on a lettuce leaf.
