Steamboat Salad
Serves 4

Ingredients
4 lettuce leaves
4 cups mixed greens
1/2 cup fresh or frozen green beans
1/2 cup onions, thinly sliced
2 flour tortillas

Dressing
1/2 cup nonfat yogurt
1/2 cup fat-free mayonnaise
2 tbsp. Dijon mustard
Ground pepper to taste

Preparation

  • Mix salad ingredients and toss with dressing.
  • Cut tortillas into thin strips (1/8-inch) and brown in a skillet sprayed with nonstick vegetable oil cooking spray.
  • Garnish top of salad with tortilla strips.
  • Serve on a lettuce leaf.
