Chicken
Posole (Posole con Pollo)
Serves 6
Ingredients
1 medium onion, chopped
2 cloves garlic, minced
Nonstick cooking spray
1-1/4 lbs. cooked chicken breast, cut into strips
1/4 lb. cooked lean pork tenderloin, cut into strips
12 cups water
2 tbsp. ground chili powder
6 cups hominy, drained and rinsed
1 tsp. salt
1/4 tsp. oregano (optional)
Radishes, sliced thinly
Cilantro, chopped
Lime wedges
Tortillas
Preparation
- In a Dutch oven, sauté onion and garlic using cooking
spray.
- Add chicken and pork pieces. Cook until meats are thoroughly
browned.
- Add water, chili powder, hominy, salt and oregano.
- Bring to a boil, cover and simmer for 20 to 30 minutes.
- Serve with radishes, cilantro, lime wedges and warm tortillas.
