Chicken
& Sausage Jambalaya
Serves 6
Ingredients
Nonstick cooking spray
1 lb. skinned and boned chicken breasts, cut into bite-size pieces
1 lb. smoked turkey sausage, cut into bite-size pieces
2 medium tomatoes, peeled, seeded and chopped (about 1 cup)
1 cup finely chopped onions
1/2 cup green bell pepper, finely chopped
1/2 cup celery, finely chopped
2-1/2 cups chicken stock or water
1/4 tsp. salt
1/4 tsp. ground thyme
1/4 tsp ground oregano
1/4 tsp ground red pepper
2 cups hot cooked rice
1/4 cup green onions, finely chopped
1 Tbsp. parsley, chopped fresh
Preparation
- Spray the inside of a large cast-iron pot with nonstick cooking
spray. Place the pot over high heat.
- When the pot is very hot, add the chicken and sausage; cook,
stirring constantly, for 10 minutes until browned.
- Reduce heat and add the tomatoes, onions, bell pepper and celery;
cook for 15 minutes, stirring often.
- Remove pot from heat and stir in the rice, green onions and
parsley.
- Cover and let stand for 5 minutes before serving.
