Meat and Potato Stew (Carne con Papas)
Serves 4
Ingredients
1 lb. lean round steak, with excess fat trimmed, cut into 2-inch
pieces
3 medium potatoes, cubed into 1-inch pieces, peeled if desired
1/4 cup tomato sauce, no salt added
3 cups water
1 tsp. salt
3 cloves garlic
1 tsp. mixed Mexican spices, ground in a molcajete (mortar), or
1/2 tsp cumin seeds and 1/4 tsp. whole black pepper
Preparation
- In a Dutch oven, brown steak pieces using medium heat. Use
no additional oil or fat.
- Brown until all juices have evaporated.
- Add cubed potatoes, tomato sauce, water and spices. Bring stew
to a boil, then reduce heat and simmer uncovered for about 30
minutes or until potatoes are tender.
