Asparagus
with Garlic and Parmesan
Serves 4
Ingredients
2 slices bread, torn into 1-inch pieces
Olive oil spray
2 tsp. extra-virgin olive oil
2 medium cloves garlic, minced, or 1 tsp. bottled minced garlic
1-1/2 tsp. dried oregano, crumbled
2 tbsp. parmesan cheese, shredded, not grated
1 lb. asparagus spears, trimmed
1/8 tsp. salt
Preparation
- Put bread in a food processor or blender and pulse until texture
of commercial bread crumbs.
- Spray a large nonstick skillet with olive oil spray. Heat olive
oil over medium-high heat and swirl to coat bottom.
- Add garlic and cook for 10 seconds, stirring constantly.
- Add bread crumbs and oregano. Cook for 5 minutes, or until crumbs
are golden-brown, stirring frequently. Remove from heat and stir
in Parmesan cheese. Set aside.
- To serve, arrange asparagus on a serving platter. Sprinkle with
salt and top with crumb mixture.
