Roasted Cajun Potatoes
Serves 4
Potatoes are a wonderful comfort food-not just because they taste
great but also because they low in calories and high in vitamin C,
potassium and fiber.
Ingredients
1 lb. baking potatoes
2 Tbsp. finely chopped fresh parsley
2 tsp. canola oil
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. ground red pepper
1/2 tsp. dried thyme leaves
1/4 tsp. ground black pepper
Preparation
- Preheat oven to 400 degrees.
- Peel potatoes, and cut lengthwise into
8 wedges.
- Toss potatoes with herbs and spices until evenly coated.
- Place potatoes
in a single layer on an ungreased jelly-roll pan and bake 50 minutes,
turning wedges halfway through cooking time.
Serve immediately.
