Beans with Water Chestnuts
Serves 6
Ingredients
1-1/2 lbs. fresh green beans, trimmed (about 5 cups)
2 tsp. acceptable* vegetable oil
1 tsp. hot-pepper oil
8-ounce can sliced water chestnuts, drained
2 tbsp. sesame seeds, dry-roasted
1/2 tsp. salt
*Use canola, safflower, soybean, sunflower, sesame
or olive oil.
Preparation
- In a large saucepan over high heat, bring to a boil enough water
to cover beans.
- Meanwhile, cut beans diagonally into 1-1/2-inch pieces.
- Boil beans for 4 minutes. Drain and plunge into ice water to
halt cooking. Drain.
- In a large skillet, heat vegetable and hot pepper oils over
high heat, swirling to coat bottom of pan.
- Stir-fry water chestnuts for 1 minute.
- Add sesame seeds, beans and salt.
- Cook until thoroughly heated, stirring constantly.
