Potato Salad
Low-calorie, low-fat and guilt-free!
Serves 6
Ingredients
1 cup bean sprouts, rinsed and drained
4 cold baked potatoes, peeled and cut into chunks
1/4 cup walnuts, coarsely chopped
4 celery stalks, thinly sliced
4 radishes, sliced
3 tbsp. fresh dill weed, snipped
2 tbsp. fresh parsley, snipped
1/3 cup fat-free mayonnaise
2 tbsp. lemon juice
4 tsp. Dijon mustard
1/4 tsp. curry powder
Preparations
- Combine sprouts, potatoes, walnuts, celery, radishes, dill weed
and parsley in a bowl.
- In another bowl, whisk mayonnaise, lemon juice, mustard and
curry powder. Pour dressing over potato mixture; toss to coat.
- Cover and refrigerate until ready to serve.
