Posole Pintos
A spicy side dish!
Serves 8
Ingredients
1 15 oz. can yellow hominy
2 15 oz. cans pinto beans
1 tomato, diced small
1/4 cup onion, diced small
2 cloves garlic, minced
1 fresh serrano pepper, minced (1/2 cup)
2 tsp. cilantro, chopped
1 tsp. chili powder
1/2 tsp. cumin
1/2 cup water
Preparation
- Rinse and drain hominy and beans.
- In a large saucepan, combine the hominy and beans with the remaining
ingredients.
- Heat through.
