Southwestern Rice Casserole (Arroz Suroeste)

Ingredients
Nonstick cooking spray
1 cup brown rice, uncooked
8 oz. plain yogurt
1/2 cup chopped California green chilies, drained
4 oz. cheddar cheese

Preparation

  • Preheat oven to 350 degrees.
  • Spray casserole dish with nonstick cooking spray.
  • Cook brown rice as directed on package. Mix rice and yogurt well. Add green chilies.
  • Pour mixture into casserole dish. Sprinkle with grated cheese.
  • Bake for 20 minutes.
