Veggie Spaghetti
Serves 6
Ingredients
1 package (10 oz.) angel hair pasta
2 tbsp. butter
1/2 red onion, chopped
1 tsp. minced garlic
3 zucchini, diced
1 lb. button mushrooms, quartered
1 (16 oz.) jar pasta sauce
1 (15 oz.) can whole kernel corn, drained
Preparation
- Bring a large pot of lightly salted water to a boil. Add pasta
and cook for 8 to 10 minutes or until al dente; drain.
- While pasta is cooking, in large skillet over medium heat, sauté
onion in butter for 2 minutes. Stir in garlic and zucchini and
cook 3 minutes more. Add mushrooms and cook 5 minutes more, until
mushrooms are soft.
- Pour in pasta sauce, reduce heat to low and simmer. Add corn
and bring back to a simmer again to heat through.
- Serve sauce over pasta with a dab of butter or toss together.
