Special Occasion Rice
Serves 4

Ingredients
3/4 cup raw rice
1-1/2 cups water
1/3 cup onion, chopped
2 tbsp. green pepper, chopped
3 tbsp. carrots, shredded
2 tbsp. fresh parsley, snipped
2 bay leaves

Preparation

  • Combine all ingredients in a saucepan. Heat to a boil.
  • Reduce to simmer and cook, covered, for 20 minutes.
  • Fluff and serve.
