Spicy Squash (Calabacitas)
Serves 6

Ingredients
1-1/2 tsp. low-calorie tub margarine
1/2 cup onion, finely chopped
1/2 red pepper, chopped
2 medium zucchini squashes, cut in julienne strips
2 yellow squashes, cut in julienne strips
1/2 tsp. salt
1/8 tsp. chili powder
1 tsp. cilantro, finely chopped

Preparation

  • In a large skillet, melt margarine. Gently sauté onion and red pepper until tender.
  • Add squash and continue to sauté for about 5 minutes. Just before serving, toss with salt, chili and cilantro.
