Zucchini

Ingredients
2 medium zucchini (8-inches long)
1 tsp. olive oil
1 clove garlic, minced
1/4 cup onion, chopped
1/4 cup green onion, chopped
1/4 cup green pepper, chopped
4 large mushrooms, chopped
1 tomato, chopped
1/2 tsp. oregano
2 tbsp. Parmesan cheese, grated
Preparation
- Preheat oven to 350 degrees.
- Cut zucchini in half; scoop out pulp and dice.
- Place scooped-out zucchini shells, cut side down, in a baking
dish with a small amount of water. Bake or microwave until tender-crisp.
- Heat oil in skillet and stir-fry garlic, onion, green pepper
and mushrooms until tender-crisp.
- Add a little water if vegetables start to stick. Add scooped-out
zucchini pulp and stir-fry for 1 minute.
- Add tomatoes and oregano. Mix well.
- Spoon mixture into zucchini boats.
- Top with Parmesan cheese. Broil until cheese is browned.
